Mindy Segal disrupts medical marijuana with edible candies

After your namesake restaurant is well into its second decade and still flourishing, after you win a James Beard Foundation Award for outstanding pastry chef, and after you release a popular cookbook, “Cookie Love,” what’s next? If you’re Mindy Segal, who has worked in the kitchens at Charlie Trotter’s and MK, you disrupt the edible marijuana industry.

In 2016, Segal partnered with Cresco Labs, one of Illinois’ largest medical marijuana cultivators, to create a first-of-its-kind line of high-quality culinary edibles modeled after the popular treats—chocolate peanut brittle, snickerdoodle cookies, chocolate fudge brownies and the like—sold at Segal’s Bucktown restaurant, Mindy’s Hot Chocolate, which opened in 2005. Mindy’s Artisanal Edibles, which contain a clear distillate of THC to ensure proper dosing and eliminate any odious cannabis flavor, launched on April 20, 2016, with two products.
